Slowcooker Sopa de Pollo

here's what you'll need

Ingredients

HEYYYY I actually have measurements for this shit!

• 1-1.5 lbs thawed chicken breasts

• 1 onion, roughly chopped

• 2 garlic cloves, minced

• 1 tablespoon or more of chopped cilantro

• 1 (15 oz.) can chopped tomatoes

• 1 (10 oz.) can enchilada sauce

• 1 (4 oz.) can of chopped green chiles

• 1 can of black beans, drained

• 1 small (8 oz.) can yellow corn, drained

• 1 (14 oz.) can chicken broth

• 2 cups water

• 1 tsp cumin

• 1 tsp chili powder

• 1 tsp salt

• ¼ tsp ground black pepper

• 1 bay leaf (optional??? i still don't know if bay leaves even do anything?)

optional ingredients to add to your bowl upon serving:

–> sliced avocado

–> squeeze of lime

–> sour cream

–> shredded cheese of some kind

–> fresh cilantro

–> crispy tortilla strips

etc, etc, etc, etc

let's make this shit

DUMP ALL THAT SHIT INTO A SLOW-COOKER (preferably in the order listed above.)

Protip: Raw chicken must be thawed. Don't ever put frozen meat into a slowcooker. Safety and shit.

STIR IT UP.

COOK IT ON HIGH FOR 5 HOURS. (or on low for 9 hours)

PULL THE CHICKEN OUT. SHRED IT WITH A FORK. DUMP IT BACK IN. EAT THAT SHIT.
