Uncle Gene's Randomass Cobbler

here's what you'll need

Tools:
  • Working oven (toaster ovens do not count)
  • 8x8 baking dish or some oven-safe receptacle of similar size
Ingredients:
  • BUTTERRR
  • All purpose flour
  • Baking powder
  • sugar
  • salt (ALWAYS)
  • milk
  • vanilla extract
  • FRUIT (I used fresh peaches but other shit works too)

I just made the most randomass peach cobbler y'all.

We found some really good fresh peaches at a plant nursery today and it's like... 9:30 at night and I'm standing in my kitchen looking at these sexy peaches and you know what? I wanted peach cobbler. So I made the simplest fastest peach cobbler ever.

You ready?

Preheat oven to 350F.

Get an 8x8 or similar size baking pan and put 6 Tbsp (approx. 3/4 stick) butter in it. Stick it in the oven and let the butter melt completely. But don't forget about it, or you'll burn the butter.

In a big bowl, mix:
-1 cup all purpose flour
-2 tsp baking powder (If you have no baking powder, use self-rising flour instead of all purpose flour)
-3/4 cup sugar
-Pinch of salt

To the bowl, add:
-1 cup milk
-1 tsp vanilla

Mix well.

!!PROTIP!! This batter is eggless, so you can taste it on the spot. So you can always put in less sugar and then just add more til it's sweet enough for you.

Pour the batter directly over the butter in the 8x8 pan. You're gonna be like, "Holy shit that's a fuckton of butter," and it is. This is not healthy food.

Dump in whatever fresh fruit you want. In this case, I used about 16 ounces fresh sliced peaches. Alternatively, you can use blackberries, strawberries, blueberries, etc! Or you can do a mix, like blackberry, raspberry, and blueberry together. Whatever, you're the boss of your cobbler okay. If your fruit is fresh and dry, your cobbler will be cakey. If it's sitting in juice, your cobbler will be goopier. That's not a word, but you get it. Both are delicious.
***Yes you can use canned fruit! Don't drain it - keep the juice. But you really might want to cut back on the sugar if you use canned. Mark my words.

Gently spread the fruit evenly around the pan, but do not stir.

Put that shit in the oven. 350F for 30 minutes or until crust is golden.
